      荧光共振能量转移技术(fluorescence resonance energy transfer, FRET)是一种均相分析检测技术, 具有灵敏度高、选择性好、操作简单方便等优点, 广泛应用于食品安全检测领域。本文主要综述了荧光共振能量转移的基本原理, 对荧光共振能量转移在食品中各种安全危害因子包括真菌毒素、抗生素、重金属等分析检测中的应用进行了概述, 最后对其未来的发展方向进行了展望。
英文摘要:
      Fluorescence resonance energy transfer (FRET) is a kind of highly sensitive and selective homogeneous bioassay technique and is also easy to operate, which has been widely used in the fields of food safety analysis. In this paper, the basic principle of FRET was introduced, and then the research progresses of FRET in the analysis of hazard factors of food safety were summarized, including the detection of mycotoxins, antibiotics and heavy metals, etc. Finally the future perspective of FRET in the fields of food safety was prospected.
