      食品腐败变质是食品安全问题中最主要的原因之一, 据世界卫生组织(WHO)数据统计, 每年全球食品工业仅因食品腐败变质带来的经济损失就多达数百亿美元。食品发生腐败变质不仅带来巨大的经济损失, 而且给人们健康带来严重危害。食品在生产、加工、储存、运输和销售等各个环节中, 当受到微生物、酶作用、机械损伤、病害、光照、氧气等不当的贮藏条件都有可能导致腐败变质。因此, 加强对食品腐败变质的检测和监测显得尤为重要。然而, 目前现有常用的检测方法存在过程操作繁琐、时效性差或灵敏度较低等缺点, 难以满足现代快速准确检测的需要, 成为制约食品质量安全的瓶颈。本文主要介绍了计算机视觉技术对微生物、病害引起的食品原料腐败变质的检测, 来判断食品腐败变质的程度, 并介绍最新进展及研究现状, 最后展望了其应用前景。
英文摘要:
      Food putrefaction was one of the most important issues of food safety. According to the statistical data of World Health Organization (WHO), the global economic losses due to food spoilage reached up to several tens of billion dollars each year. Rotten food not only brought serious damage to people’s health, but also caused huge economic losses. Serious food spoilage could be carried out in all aspects of food processes, such as processing, storage, transportation and sale, while incorrect conditions were used. Microbes, enzyme, mechanical damage, light and oxygen were also the main factors to lead food spoilage. The detection and monitoring of food spoilage were particularly important. However, traditional detection methods were tedious, time-consuming and low sensitivity, and difficult to meet the speed and accuracy requests of modern industry, which became a bottleneck of food quality and safety supervision. This paper mainly described the latest developments and research progresses on computer vision methods to detect food materials corruption caused by micro-organisms and diseases, and predicted their application prospects.
