      目的 本文根据高职餐饮食品安全专业人才培养的特点, 结合专业就业岗位的典型工作任务, 对专业核心课程《食品安全快速检测技术》进行了课程体系的构建。方法 以培养学生成为餐饮行业安全管理人员为目标, 为学生的可持续性发展服务进行课程定位; 以真实岗位需求、模拟真实工作环境、合理安排课程比例为课程设计理念;完善课程内容, 优化教学方法, 尝试引入“翻转课堂”理念进行教学; 以过程性考核配合终结性考核构建完善的课程考核体系。结果 专业核心课程《食品安全快速检测技术》课程体系以符合高职学生培养要求进行了全面构建。结论 该课程体系的构建能够使学生在课程学习中对食品安全快速检测技术有深入认识和掌握, 满足今后实际工作要求并为学生今后的深入学习提供理论和技能基础。
英文摘要:
      Objective According to talent cultivation features in dietary food safety specialty in higher vocational colleges, the curriculum of food safety rapid detection technology was constructed combined with the tasks of the job. Methods Curriculum orientation was to train the students to become safety managers in catering industry, and offer service for the sustainable development of students. Curriculum design was constructed by the true position requirements and the simulation work environment and the suitable curriculum proportion. The colleges tried to use the concept of "flipped classroom" in teaching method, improve the curriculum content, and perfect the system of curriculum evaluation. Curriculum evaluation system was constructed through the procedural assessment combined with summative assessment. Results The curriculum system was built for training requirements with higher vocational. Conclusion The students could understand and master the rapid detection technology of food safety in this course, and it could provide theoretical basis and skills for the actual work in the future.
