      目的 确定常见淀粉制品中合成色素的测定方法。方法 选用不同的固液比、水浴温度、酸解时间, 确定淀粉制品中合成色素的最佳测定方法。结果 选用固液比1∶7, 用20%硫酸溶液对非油炸类淀粉制品(小麦粉, 米粉)在100 ℃沸水浴中, 酸解10~15 min,六种常见合成色素的平均回收率:小麦粉>68%, 米粉>74%, “过程”回收率:小麦粉在84%以上, 米粉(大米, 糯米)在91%以上, 能够满足定量分析的要求。结论 本研究为常见淀粉类食品中色素的定量测定提供了实践指导, 为完善国标修订提供了参考。
英文摘要:
      Objective To develop a detection method for synthetic pigments in starch product. Methods Different parameters were studied to determine the optimum condition, including ratio of solid and liquid, water bath temperature and acid hydrolysis time. Results The optimum condition were as follows: ratio of solid and liquid was 1:7, 20% H2SO4 solution was adopted for acid hydrolysis, water bath temperature was 100 ℃, and the time of acid hydrolysis was 10~15min. The average recoveries of the six synthetic pigments deter-mined in wheat flour and rice flour were >68% and >74%, respectively; the recovery rate of the process in wheat flour and rice flour (including sticky rice flour) were >84% and >91%, which met the requirement of quantitative analysis. Conclusion The described method offers practical guidance for synthetic pigment determination in common starch products and provides a reference for the improvement of the national standard for synthetic pigment addition.
