主要研究方向:

长期从事水产品中有害微生物及其毒素的绿色防控。近年来,针对鱼干防霉的迫切需求,开展了水产干制品优势真菌生长和产毒的内源(氨基酸释放)和外源(生物防霉剂)防控技术的研究,系统构建了干制品加工贮藏过程中品质变化与霉变发生的的内在关系,以及有害真菌绿色防控的理论体系,掌握了真菌分离鉴定、形态观察、蛋白互作和信号传导解析等实验方法和操作技术。
