主要研究方向:

一、安全食品防腐剂的开发:

1)新型乳酸菌细菌素的开发和作用机理研究,包括抑菌活性、抑菌机理、多肽结构与功能的关系、病原菌对细菌素的抗性机理研究;

2)植物精油的抑菌驱虫活性和机理研究,包括精油抑菌活性、抑菌机理,趋避和触杀活性和机理研究,安全果蔬保鲜剂的开发。

二、食品微生物快速检测:利用分子诊断技术,对食品腐败微生物和病原微生物快速检测。

三、海洋食品精深加工:东海藻类功能性食品开发和功能性评价。
