目的 本研究基于国家营养监测要求对甘肃省内常见甜点中维生素含量情况进行检测,对甘肃省内甜品营养结构进行了解。方法 以甘肃省内常见的48种甜品为研究对象,采用《食品安全国家标准》中规定的高效液相色谱法对样品中维生素A、胡萝卜素、维生素B1、维生素B2、维生素C、维生素E以及维生素E(包括α-生育酚、β-生育酚、γ-生育酚和δ-生育酚)的含量进行检测。结果 48种甜品中除去维生素B1[下标,全文统一修改]均未检出外,其余维生素检出率从高到低为维生素E>维生素B2>维生素A>胡萝卜素>维生素C;样品中维生素A含量为未检出~549 μg/100 g,中位数为20 μg/100 g;胡萝卜素检出含量为未检出~142.65 μg/100 g,中位数为0.25 μg/100 g;维生素B2检出含量为未检出~0.226 mg/100 g,中位数为0.09 mg/100 g;维生素C检出为未检出~4.74 mg/100 g,中位数为0.25 mg/100 g;维生素E(各分型之和)检出含量为未检出~549 mg/100 g,中位数为21.65 mg/100 g;α[拉丁字母均需斜体,全文统一更改]-生育酚检出含量为未检出~2.69 mg/100 g,中位数为1.015 mg/100 g;β-生育酚检出含量为未检出~1.24 mg/100 g,中位数为0.02 mg/100 g;γ-生育酚检出含量为未检出~11.81 mg/100 g,中位数为1.135 mg/100 g;δ-生育酚检出含量为未检出~2.04 mg/100 g,中位数为0.02 mg/100 g。结论 脂溶性维生素在甘肃省内甜点样品中检出含量普遍较高,水溶性维生素检出均较低。 |

Objective This study aimed to investigate the vitamin content in common desserts in Gansu Province based on the requirements of national nutritional monitoring, in order to understand the nutritional structure of foods in Gansu Province. Methods A total of 48 types common desserts from Gansu Province were analyzed. The contents of vitamin A, carotene, vitamin B1, vitamin B2, vitamin C, vitamin E, and vitamin E fractions, i.e., α-tocopherol, β-tocopherol, γ-tocopherol, and δ-tocopherol, were determined by high performance liquid chromatography (HPLC) method as specifiedin the National Standard for Food Safety. Results The results showed that among the 48 desserts, except for vitamin B1, the detection rates of other vitamins ranged from high to low: vitamin E>vitamin B2>vitamin A>carotene>vitamin C; The content of vitamin A in the sample is ND~549 μg/100 g, median of 20 μg/100 g; The content of carotene is ND~142.65 μg/100 g, median of 0.25 μg/100 g. The content of vitamin B2 is ND~0.226 mg/100 g, median of 0.09 mg/100 g; The content of vitamin C was ND~4.74 mg/100 g, median of 0.25 mg/100 g. The detected content of vitamin E (sum of various subtypes) ranges was ND~ 549 mg/100 g, median of 21.65 mg/100 g;The content of α-tocopherol was ND~ 2.69mg/100 g, median of 1.015 mg/100 g; The content of β-tocopherol was ND~1.24 mg/100 g,median of 0.02 mg/100 g; The content of γ-tocopherol was ND~11.81 mg/100 g, median of 1.135 mg/100 g; The content of δ-tocopherol was ND~ 2.04 mg/100 g, median of 0.02 mg/100 g. Conclusion The fat-soluble vitamins were generally detected at higher levels in the samples from Gansu Province, while the water-soluble vitamins were detected at lower levels. |
