目的 以铁皮石斛、黄精、黄芪、桑椹、枸杞为原料,进行复合饮料的最佳工艺配方优化及其免疫力调节作用研究。方法 首先采用单因素试验探讨铁皮石斛浓缩汁、黄精浓缩汁、黄芪浓缩汁、桑椹浓缩汁、枸杞浓缩汁等原料不同添加量对复合饮料品质的影响,然后采用正交试验,对复合饮料配方进行优化,确定铁皮石斛桑椹枸杞复合饮料最优的配方,并对其免疫力调节作用进行分析。结果 研究结果表明,铁皮石斛浓缩汁70%、黄精浓缩汁1%、黄芪浓缩汁1%、桑椹浓缩汁10%、枸杞浓缩汁5%为铁皮石斛复合饮料的最佳配料比,按此配方所得的复合饮料感官评分最高,不同质量浓度的铁皮石斛复合饮料组(7.81、15.6和31.2 μL/mL)能显著上调斑马鱼的尾部中性粒细胞以及显著提高IL-12和TNFα基因相对表达量。结论 铁皮石斛复合饮料具有显著增强免疫力的功效。 |

Objective This study aimed to optimize the formulation and immunity efficacy activity of a compound beverage with Dendrobium officinale, Polygonatum sibiricum, Astragalus membranaceus, mulberry, and Lycium barbarum as raw materials. Methods Firstly,to explore the effect of compound liquid dosage of Dendrobium officinale extract,Polygonatum sibiricum extract, Astragalus membranaceus extract, Mulberry extract, and Lycium barbarum extract impact on the quality of compound beverage by using single factor experiment,then the optimum formula of the beverage was determined by orthogonal tests. Finally, the immunity efficacy was analyzed. Results The results showed that the optimal formula of the compound beverage was that Dendrobium officinale extract content was 70%,Polygonatum sibiricum extract content was 1%, Astragalus membranaceus extract content was 1%, mulberry extract content was 10%, and Lycium barbarum extract content was 5%. Under such conditions, the sensory score was 84.6. The results of Zebrafish Model experiments showed that different quality concentration groups of compound beverage (7.81, 15.6, and 31.2 μL/mL) could significantly increase the number of neutrophils in the tail of zebrafish, and significantly upregulated the relative expression levels of IL-12 and TNFα gene. Conclusion Dendrobium officinale compound beverage has a significant effect on enhancing immunity. |
