      采用UPLC-MS/MS法对海南省387批海水产品中14种生物胺进行检测,根据检测结果,采用风险商(Hazard Quotient,HQ)对检出的组胺进行膳食暴露风险评估。结果显示,387批海水产品检出的总生物胺含量为0.493~11109.692 mg/kg,检出含量较高的几类生物胺为精胺、亚精胺、组胺、腐胺、尸胺等,有2个样本检出组胺的含量超过200 mg/kg。评估结果显示海南省居民摄入组胺的EDI(Estimated daily intake)为0~0.14281 mg/kg.bw/d,风险商HQ为0~0.00286(HQ<1),对人体健康威胁较小。
英文摘要:
      To detect 14 biogenic amines in 387 seafoods in Hainan by UPLC-MS/MS (Ultra performance liquid chromatography-tandem mass spectrometry). According to the detection results, Hazard Quotient (HQ) was used to assess the dietary exposure risk of HIS. The results showed that the total biogenic amines detected in 387 seafoods were 0.493 ~ 11109.692 mg/kg. The higher biogenic amines were spermine, spermidine, histamine, putrescine and cadaverine. Two samples were found to contain histamine exceeding 200 mg/kg. The EDI(Estimated daily intake) of histamine was 0.014281 mg/kg.bw/d and HQ was 0.00286, which was lower than 1, indicating that there was no risk and little threat to human health.
