近年来, 荧光探针在生物分析和食品检测中得到了广泛的研究和应用。硫黄素T (thioflavin T, ThT)是一种非常重要的黄色荧光染料分子, 常用于包括阿尔茨海默病、朊病毒病以及几种类型的系统性淀粉样蛋白检测。目前, ThT荧光调控策略主要有淀粉样纤维蛋白结合、DNA修饰、G-四链体结合、金属离子配位、胶束调控等方式。由于其价格低廉、生物相容好、光稳定, 对环境敏感, 也逐渐被用于重金属离子、生物毒素和农兽药残留等方面的检测中。本文对ThT荧光调控策略及其食品安全检测中的应用进行了系统综述, 以期为ThT在食品安全检测中的研究应用提供参考和思路。 |

In recent years, fluorescence probes are widely studied and applied in biological analysis and food testing. Thioflavin T (ThT) is a very important yellow fluorescent dye. It is been usually used for detecting several types systemic amyloid proteins, including Alzheimer’s disease, prion diseases. Currently, the ThT fluorescence regulation strategies mainly include amyloid fibrils binding, DNA modification, metal ion coordination, micelle regulation, etc. ThT is also gradually used in the detection of heavy metal ions, biotoxins, and residues of pesticide and veterinary drug, due to its cheap price, good organism compatibility, light stability, and sensitivity to the environment. This paper systematically reviewed the regulation strategy of ThT fluorescence and its application in food safety detection, in order to provide references and ideas for the research and application of ThT in food safety detection. |
