      全氟及多氟烷基化合物(Perfluoroalkyl and polyfluoroalkyl substances, PFASs)由于其环境持久性、迁移性、生物累积性、疏水疏油性及化学稳定性等特性,已被广泛应用于工业生产及日常生活领域。然而,PFASs的广泛存在对生态环境及人类健康构成了潜在威胁。饮食途径,特别是动物源性食品(如鱼类、贝类、家禽及其加工产品等),是人们暴露于PFASs的重要途径之一。因此,建立快速、灵敏的检测方法,监测动物源性食品中的PFASs污染水平至关重要。本综述系统综述了动物源性食品中PFASs的样品前处理技术,阐述了色谱及色谱-质谱联用技术在检测中的应用,最后总结了不同基质的动物源性食品中PFASs污染水平的研究现状。
英文摘要:
      Perfluoroalkyl and polyfluoroalkyl substances (PFASs) are widely utilized in industrial production and daily consumer products due to their environmental persistence, mobility, bioaccumulation, hydrophobic and oleophobic properties, chemical stability, and toxicity. However, the widespread presence of PFASs poses potential threats to both the ecosystem and human health. Dietary intake, particularly through animal-derived foods (such as fish, shellfish, poultry, and their processed products), is one of the major exposure pathways for humans to PFASs. Therefore, developing rapid and sensitive detection methods to monitor PFASs contamination in animal-derived foods is of great importance. This review systematically summarizes the sample preparation techniques for PFASs in animal-derived foods, discusses the application of chromatography and chromatography-mass spectrometry in detection, and provides an overview of the current research on PFASs contamination levels in various matrices of animal-derived foods.
