      目的? 锡林郭勒羊肉是国家著名地理标志产品,目前对其矿物质元素缺乏系统性研究。方法? 本研究以锡林郭勒地区苏尼特羊肉、乌珠穆沁羊肉、察哈尔羊肉为实验样品,采用电感耦合等离子体发射光谱法(ICP-OES)和电感耦合等离子体质谱法(ICP-MS)对44种常量和微量矿物质元素进行测定,又以舍饲小尾寒羊肉为对照,分析放牧羊肉与舍饲羊肉之间的矿物质元素差异。结果? 3种放牧羊肉在常量元素含量存在较大差异,典型草原上放牧的乌珠穆沁羊由于营养充分其含量高,荒漠草原上放牧的苏尼特羊肉由于营养匮乏其含量低,然而运动多的苏尼特羊肉Ca含量高,不同饲养方式下羊肉常量元素含量差异较大,舍饲羊肉常量元素介于苏尼特羊肉和乌珠穆沁羊肉之间;3种放牧羊肉在微量元素含量存在较大差异,产地土壤中矿物质的丰度决定了其在羊肉中的丰度。结论 羊肉中的矿物质元素指纹规律为:常量元素靠营养,微量元素源地区。

      Objective? Xilingol mutton is a national famous geographical indication product, but there is a lack of systematic Xilingol mutton is a national famous geographical indication product, but there is a lack of systematic research on its mineral elements. Methods In this study, 44 major and trace mineral elements were determined by inductively coupled plasma emission spectrometry (ICP-OES) and inductively coupled plasma mass spectrometry (ICP-MS) with Sunite mutton, Ujumqin mutton and Chahar mutton in Xilingol as experimental samples, and the house fed Xiaowei Han mutton was used as control. To analyze the differences of mineral elements between grazed mutton and housed mutton. Results? The results show that the three kinds of grazing sheep there is biggish difference in constant elements, typical steppe grazing Ujumuqin sheep because its content is high, nutrition fully desert steppe grazing Laura mutton due to lack of nutrition of the content is low, however exercise more model, mutton high Ca content, mutton constant element content differences under different feeding way, The main elements of shelf-fed mutton were between Sunite mutton and Ujumuqin mutton. There were significant differences in the content of trace elements among the three kinds of grazing mutton, and the abundance of minerals in the soil of the producing area determined the abundance of them in mutton. Conclusion The fingerprint rule of mineral elements in mutton is: major elements depend on nutrition, trace elements source area.
