In China, mulberry leaf abound in resources and have been enlisted in the list of plant resources that are "both food and medicine" by the Ministry of Health.. It has high nutritional value and multiple effects, such as anti-cancer, lowering blood sugar, lowering cholesterol, and anti-oxidation, and has significant potential significance for the prevention and treatment of various diseases.. This article introduces the main active components and biological activities of mulberry leaf, and summarizes the specific applications of mulberry leaf in the food industry, the feed industry and other related industries. In addition, the current situation ofdevelopment and utilization of mulberry leaf, future research directions and broad application prospects have also been prospected. The purpose is to provide reference bases for promoting the development of the sericulture industry, enriching the types of food, tapping the potential of resources, promoting scientific research, and driving the development of the industrial chain. |
