      黄曲霉毒素B1 (aflatoxin B1, AFB1)的控制是油脂加工领域的难题。受技术水平限制, 我国食用油脂及制品中AFB1限量标准难以达到国际高水平。AFB1的性质较稳定, 在油脂加工过程中难以完全脱除。目前, 在严格控制原料品质的基础上, 借助碱炼工序等方法使AFB1水解再经水洗脱除是我国油脂加工领域常用的脱除AFB1的方法。但对于利用物理压榨工艺制取的风味油脂, 仍需开发新技术以兼顾油脂的品质和安全。近年来, 高效且无二次污染的光催化技术引起广泛关注。本文在综述了油脂中AFB1控制措施的基础上阐述了光催化降解AFB1的原理、光催化效率增强途径、AFB1降解路径等, 以期为开发高效、安全、经济的光催化剂, 光催化技术在油脂加工领域的应用, 及油脂中AFB1控制新技术的研发等提供参考。
英文摘要:
      The control of aflatoxin B1 (AFB1) is a difficult problem in the field of edible oil processing. The AFB1 limit standard of edible oil and products in China is difficult to reach the international high level due to the limiting of technical status. AFB1 has relatively stable properties, which accounts for the difficulty on completely removed during oil processing. On the basis of strictly controlling raw materials quality, the common method used for AFB1 removing currently is the hydrolysis of AFB1 by neutralization and then removal by water washing in edible oil processing. However, for the flavored oil obtained by physical press process, new techniques still should be developed to ensure the quality and safety of the edible oils. In recent years, photocatalytic technology has attracted wide attention because of its high efficiency and no secondary pollution. Excepting for the control measures of AFB1 in oils, this paper summarized the principle of photocatalytic degradation of AFB1, the ways to enhance the photocatalytic efficiency, the degradation path of AFB1, etc. This review will provide references for the development of efficient, safe and economical photocatalysts, the application of photocatalytic technology, and the development of new technologies for AFB1 control in oils.
