The problem of pesticide residues in food is a global issue that poses a threat to human health. Surface-enhanced Raman spectroscopy (SERS) technology, as a fingerprint spectroscopic technique with the advantages of simplicity, speed, and sensitivity, has shown great potential in pesticide residues detection. This paper firstly described the enhancement mechanism of SERS and then provided a brief overview of the methods for SERS substrate preparation. With the focus on substrate functionality, two common types of SERS substrates used in pesticide residue detection in food were introduced: Universal substrates and specific substrates. By reviewing their applications in recent years, this paper summarized the characteristics and commonly used fabrication techniques of these substrates for pesticide residues detection in food, aiming to provide inspiration for more demands in pesticides detection utilizing SERS technology, finally, discussed the challenges and feasible suggestions for the application of SERS technology in pesticide residues detection, along with future prospects. |
