中国白酒溯源研究起步较晚, 且其溯源技术体系尚未建立完善。近代相关研究表明白酒中具有一定的地域特征因子, 结合统计学手段对这些特征因子进行定性定量分析可以达到白酒产地判别目的。由于白酒产地溯源技术研究对白酒鉴伪和优质白酒产区保护具有重要意义, 本文基于白酒化学基础, 对其地域特征物质(无机元素、稳定同位素、挥发性物质等)与相应的检测技术进行了分类探讨。同时, 本文论述了白酒地域特征物质的来源, 分析了白酒产地溯源研究的关键问题, 以期为白酒产地溯源技术体系的建立提供一定的基础。 |

The research of Chinese Baijiu traceability started late, and its traceability technology system has not been established. Modern research shows that Baijiu has some regional characteristic factors, and qualitative and quantitative analysis of these factors combined with statistical methods may achieve the purpose of geographical origin traceability discrimination of Baijiu. Since the study of Baijiu origin tracing technology is of great significance for Baijiu counterfeiting detection and protection of high-quality Baijiu producing areas. Based on Baijiu chemistry, this paper classified and discussed the regional characteristic substances (inorganic elements, stable isotopes, volatile substances, etc.) and the corresponding detection techniques. At the same time, the paper discussed the source of regional characteristic substances of Baijiu, analyzed the key problems of Baijiu origin traceability research, in order to provide a certain basis for the establishment of Baijiu origin traceability technology system. |
