      目的 研究构建小微食品企业的通用标准化知识体系。方法 面向34家小微食品企业发放问卷, 调研企业在实际生产生活中的标准化需求; 利用文献计量学分析方法和知识图谱可视化技术, 对1978—2023年间的食品标准化领域的文献进行整理统计和数据挖掘, 分析食品标准化领域的研究热点、重点问题。结果 问卷调研表明, 小微食品企业对于参与标准研制活动、标准体检建设等方面的需求度较高; 文献计量分析表明, 食品标准化领域的研究热点集中在绿色食品、食品安全、标准编写等方面。结论 本研究提出了包括标准化基础知识和企业标准化实践知识的小微食品企业标准化知识体系框架, 为系统性开展标准化知识宣传和普及提供了参考依据。
英文摘要:
      Objective To investigate the construction of the general standardized knowledge system of small and micro food enterprises. Methods Questionnaires were issued to 34 small and micro food enterprises to investigate the standardization needs of enterprises in actual production and life. Using bibliometrics analysis method and knowledge graph visualization technology, the literature in the field of food standardization from 1978 to 2023 was collated, statistics and data mining, and the hot spots and key issues in the field of food standardization were analyzed. Results The questionnaire survey showed that small and micro food enterprises had a high demand for participating in standard development activities and standard physical examination construction. The bibliometric analysis showed that the research hot spots in the field of food standardization focused on green food, food safety, standard writing and so on. Conclusion This study puts forward a framework of standardization knowledge system of small and micro food enterprises, which includes standardization basic knowledge and enterprise standardization practice knowledge, and provides a reference for systematically carrying out standardization knowledge publicity and popularization.
