      目的 采用φ6、φX174和MS2 3种被广泛接受的模式噬菌体评价气态臭氧对食品和包装材料的消毒效果。方法 以食品、包装材料及其不同模式噬菌体为研究对象, 从臭氧通入量、处理时间、模式噬菌体对数减少及其消杀效果等方面评价其对食品及包装材料的影响。结果 气态臭氧对除花生仁外的各种食品中的φ6有很好的去除效果[降低大于1.6个对数级(log), 灭活大于97.00%], 对花生仁上的φX174和MS2的影响很小[降低小于0.19个对数级(log), 灭活50.00%], 吸附在大豆上的病毒替代品被有效消毒(降低大于1.16个对数级); 气态臭氧能有效灭活包装材料上的φ6、φX174和MS2, 明显降低牛皮纸、塑料和玻璃板上φ6和MS2的含量[降低大于0.83个对数级(log), 灭活大于84.44%], 适度降低φX174的含量。结论 气态臭氧可以有效地去除φ6、φX174和MS2, 但对不同材料上不同模式噬菌体的灭活效果存在一定的差异。
英文摘要:
      Objective To evaluate the disinfection effects of gaseous ozone on food and packaging materials using 3 kinds of widely accepted pattern phages, φ6, φX174 and MS2. Methods Foodstuffs, packaging materials and their different pattern phages were used as research objects to evaluate their effects on foodstuffs and packaging materials in terms of ozone fluence, treatment time, log reduction of pattern phages and their sterilization effects. Results Gaseous ozone had a very good effect on removing φ6 from various foodstuffs except peanut kernels (reduction of ?1.6 log, inactivation of ? 97.00%), and had a very small effect on φX174 and MS2 on peanut kernels (reduction of ?0.19 log, inactivation of 50.00%), and the viral substitutes adsorbed on soybeans were effectively sterilized (reduction of ?1.16 log; gaseous ozone effectively inactivated the phage φ6, φX174, and MS2 on packaging materials. φ6, φX174 and MS2 on packaging materials, significantly reduced the levels of φ6 and MS2 on kraft paper, plastic and glass plates (>0.83 log reduction, inactivation ?84.44%), and moderately reduced the levels of φX174. Conclusion Gaseous ozone can effectively remove φ6, φX174 and MS2, but there are some differences in the inactivation of different patterns of phages on different materials.
