      目的 分析自然放牧条件下不同草地类型羊肉品质和营养成分差异。方法 选取甘肃省3个草地类型7个地区, 对屠宰后羊肉色泽、嫩度、pH、蛋白质、脂肪、氨基酸和脂肪酸等进行定量分析及评价。结果 剪切力: 河西温性荒漠、黄土高原温性草原<青藏高原高寒草甸。羊肉屠宰1 h和24 h后pH呈下降趋势。水分和蛋白质: 黄土高原温性草原<青藏高原高寒草甸、河西温性荒漠。脂肪: 青藏高原高寒草甸>河西温性荒漠>黄土高原温性草原。氨基酸: 河西温性荒漠>黄土高原温性草原>青藏高原高寒草甸。必需脂肪酸: 河西温性荒漠>青藏高原高寒草甸>黄土高原温性草原。结论 不同草地类型下羊肉理化指标与食用品质存在一定差异, 但同种草地类型不同地区呈现相似规律, 研究结果可为甘肃羊肉品质的深入研究及特色产品开发提供参考。
英文摘要:
      Objective To analyze the differences in meat quality and nutritional composition of mutton from different grassland types under natural grazing conditions. Methods Three grassland types and 7 regions in Gansu Province were selected to quantitatively analyze and evaluate the color, tenderness, pH, protein, fat, amino acids, and fatty acids of slaughtered mutton. Results Shear force: Hexi temperate steppe desert, Loess Plateau temperate steppeHexi temperate steppe desert>Loess Plateau temperate steppe. Amino acids: Hexi temperate steppe>Loess Plateau temperate steppe>Tibet Plateau alpine meadow. Essential fatty acids: Hexi temperate steppe desert>Tibet Plateau alpine meadow>Loess Plateau temperate steppe. Conclusion There are certain differences in the physicochemical indicators and edible quality of mutton under different grassland types, but the similar grassland type shows similar patterns in different regions. The research results can provide references for in-depth research on the quality of muttonin Gansu and the development of characteristic products.
