全氟辛烷磺酸(perfluorooctane sulfonic acid, PFOS)是全氟烷酸的典型代表, 因其难以降解且具有较强的生物毒性和蓄积性而逐渐成为一种有机类食品安全风险因子。传统的检测方法存在设备价格高昂, 测试周期长, 样品前处理耗时费力等问题, 无法满足大规模样品筛查和现场检测的需求。因此, 发展快速、便捷、低成本的检测技术成为迫切需要。近年来, 相关领域开展了很多食品及环境中PFOS的荧光快速检测方法研究, 开发了多种类型的荧光探针材料, 大大提升了PFOS快速检测的技术水平。本文立足于荧光快速检测的材料设计与方法构建, 对用于PFOS检测的荧光探针组成材料进行分类, 总结了基于有机小分子、有机聚合物、无机纳米材料、微生物等不同类型探针的PFOS快速检测研究进展, 以期为有机类食品安全风险因子的快速检测方法建立与产品开发提供参考。 |

Perfluorooctane sulfonic acid (PFOS) is a typical representative of perfluoroalkanic acid. Because of difficulty in degradation, strong biological toxicity and accumulation, it has gradually become an organic food safety risk factor. Traditional detection methods still exist some drawbacks such as requirements on expensive equipments, long test, time-consuming and laborious sample pretreatments, and cannot meet the needs of large-scale sample screening and on-site testing. Therefore, developing fast, convenient, and low-cost detection technology is in high demand. In recent years, a lot of research has been carried out in related fields on the rapid detection of PFOS in food and environment, and a variety of fluorescent probe materials have been developed, which has greatly improved the technical level of rapid detection of PFOS. This paper focused on the design of probes and construction of fluorescence rapid detection methods, classified the fluorescent probes used for PFOS detection, and summarized the research progress of PFOS rapid detection based on different types of probes such as organic small molecules, polymers, nanomaterials, and microorganisms, so as to provide a reference for the establishment of rapid detection methods and product development of organic food safety risk factors. |
