      随着生活质量的不断提升及消费者健康意识的增强, 近年来我国居民乳制品消费需求呈快速增长态势。牛乳及乳制品因其丰富的营养成分和便捷的获取方式, 成为居民日常生活中不可或缺的食品之一。鉴于食品的特殊性及重要性, 以及早期个别安全事件的发生, 乳制品质量安全问题多年来一直备受大众关注。1,2-丙二醇作为饲料添加剂及兽药, 是乳制品主要原料—原奶生产过程中常用的投入品, 同时也是乳品生产过程中重要的食品添加剂。但过量摄入1,2-丙二醇有可能导致机体乳酸中毒、肾脏损伤及中枢神经系统抑制等潜在的危害。鉴于1,2-丙二醇在原奶生产过程中的广泛使用、乳及乳制品在我国居民特别是儿童日常饮食中日趋增大的占比, 以及目前国内对1,2-丙二醇食品风险评估存在的研究空白, 本综述以乳制品上游食品原料生产投入品为出发点, 总结国内外1,2-丙二醇作为食品原料投入品及食品添加剂在乳及乳制品中的研究进展, 梳理概述其膳食暴露风险评估的最新研究, 以期为科学认识乳制品中的1,2-丙二醇及今后开展食品中1,2-丙二醇联合摄入风险评估提供一定的理论支持。

      With the continuous improvement of the quality of people’s life and health consciousness, the consumption of dairy products has been growing rapidly in China over recent years. Cow’s milk and dairy products have become one of the indispensable foods of daily life because of their rich nutritional composition and convenient access. In view of the particularity and importance of food, as well as the occurrence of individual safety incidents in the early years, the issue of dairy product quality and safety has been of great public concern for many years. As feed additive and veterinary drug, propylene glycol is a common production input in the production of raw milk. And it also as one of the important food additives in the dairy industry. However, excessive intake of propylene glycol may lead to potential hazards such as lactic acidosis, kidney damage, and central nervous system depression. The widespread use of propylene glycol in the production of raw milk and the increasing share of milk and dairy products in the people’s, especially children’s daily diets, and the current research gaps in the dietary risk assessment in China. Therefore, with dairy upstream food raw material production inputs as a starting point, this article summarized the research progress of propylene glycol as food raw material inputs and food additives in milk and dairy products at domestic and abroad, and presented the latest research advances in dietary exposure risk assessment in foreign populations in detail, so as to provide some scientific supports for understanding the application of propylene glycol in dairy products and the risk assessment of combined dietary intake in future.
