      目的 构建一种快速判定猪肉腐败变质状态的荧光传感器。方法 采用溶剂热法合成锌基金属有机框架(zinc-based metal-organic framework, Zn-MOF), 并采用场发射扫描透射电子显微镜对其进行表征。以聚丙烯腈纤维薄膜作为底材, 通过真空抽滤将合成的Zn-MOF固定于底材上形成Zn-MOF薄膜。对响应时间和Zn-MOF浓度进行优化。通过Zn-MOF与腐败食品中的氨配位结合作用可实现对氨的实时捕获, 构建基于Zn-MOF薄膜的肉类腐败变质荧光快速检测方法。结果 Zn-MOF溶液质量浓度为1.250 mg/mL时制备的薄膜效果最佳, 荧光传感器响应速度<1 min, 氨气在17.63~74.92 mg/m3范围内与Zn-MOF薄膜的荧光强度呈良好的线性关系, 相关系数为0.9916, 检出限为2.470 mg/m3。在猪肉腐败的检测应用中, 随着储存时间的增加, 薄膜的荧光增强, 且与4℃下相比, 储存于25℃下的猪肉的薄膜的荧光强度更强。结论 该传感薄膜可用于猪肉的腐败变质检测, 为现场、快速、灵敏的食品质量评价提供了一种低成本的实用策略。
英文摘要:
      Objective To construct a fluorescence sensor for rapid determination of spoilage status of pork. Methods A zinc-based metal-organic framework (Zn-MOF) was synthesized by a solvent thermal method and characterized by field emission scanning transmission electron microscopy. The Zn-MOF film was formed by immobilizing the synthesized Zn-MOF on the polyacrylonitrile fiber film substrate by vacuum filtration, and the response time and concentration of Zn-MOF were optimized. The real-time capture of ammonia could be realized through the coordination binding between Zn-MOF and ammonia in spoiled food to construct a fluorescence detection method for meat spoilage based on Zn-MOF film. Results The best preparation effect was obtained when the mass concentration of Zn-MOF solution was 1.250 mg/mL. The response speed of the fluorescence sensor was less than 1 min, and the ammonia concentration and fluorescence intensity of the Zn-MOF film had a good linear relationship in the range of 17.63?74.92 mg/m3, the correlation coefficient was 0.9916, and the limit of detection was 2.470 mg/m3. In the application of pork corruption detection, the fluorescence of the film enhanced with the increase of storage time, and the fluorescence intensity of the film stored at 25℃ was stronger than of at 4℃. Conclusion The sensing film can be used for spoilage detection of pork, providing a practical strategy for in situ, rapid and sensitive food quality evaluation at low cost.
