      蜂蜜作为一种营养物质, 有许多健康益处, 例如调节免疫力和肠道微生物、抗菌、抗炎、抗氧化等。基于蜂蜜的营养价值和药用价值, 蜂蜜需求的增长速度似乎快于产品的生产速度。因此, 为了获取更高的利益可能会出现掺假蜂蜜。蜂蜜通常被掺入各种糖浆或被混淆植物和地理来源, 传统方法很难对各种蜂蜜进行检测。最近, 国际养蜂联合会建议蜂蜜应能追溯到蜂农、蜜源植物, 以及蜂场的地理位置, 并推荐了更先进的方法, 如核磁共振和高效液相高分辨质谱法等来检测多种掺杂模式和蜂蜜植物来源和地理来源。本文综述了近年来蜂蜜真实性鉴别的新方法, 包括光谱法、色谱法、核磁共振法、同位素比质谱法、电化学法、脱氧核糖核酸技术和酶活性方法, 旨在为蜂蜜鉴定提供参考。

      Honey, as a nutrient, possesses many health benefits, such as the regulation of immunity and intestinal microbes, anti-bacteria, anti-inflammation, anti-oxidation, etc. The demand for honey seems to be growing faster than the honey production based on its nutritional and medicinal benefits. Therefore, honey may be adulterated for higher benefits, often mixed into various syrups or confused with plant and geographic sources. The adulteration is difficult to be detected various kinds of honey by traditional methods. Recently, the International Federation of Beekeepers’ Association has recommended that honey should be traced back to the bee farmer, the nectar plant, and the location of the apiary, and more advanced methods are recommended to detect multiple doping patterns, honey plant and geographic origins, such as nuclear magnetic resonance and high performance liquid resolution mass spectrometry. This paper reviewed the new methods for the authenticity identification of honey in recent years, including spectroscopy, chromatography, nuclear magnetic resonance, isotope ratio method, electrochemical method, DNA technology and enzyme activity method, which provides references for the assessment of honey authenticity.
