      目的 构建不同产地沙田柚挥发性物质指纹图谱, 建立一种快速、准确地鉴别沙田柚产地及品质的方法。方法 采用气相色谱-离子迁移谱法(gas chromatography-ion mobility spectrometry, GC-IMS)对广东和广西产的沙田柚果皮及汁胞的挥发性物质进行分析, 构建不同产地沙田柚挥发性物质的指纹图谱, 比较不同产地沙田柚的特征挥发物之间的组成及相对含量差异。结果 沙田柚汁胞中挥发性物质的种类及柠檬烯、芳樟醇、蒎烯等主要香气成分的含量均明显少于果皮。不同产地沙田柚含有的特征挥发性物质的种类及含量存在差异, 通过将果皮或者汁胞的特征挥发性物质进行主成分分析(principal component analysis, PCA)分析, 均可对广西和广东的柚果进行有效区分。结论 基于GC-IMS技术结合数据可视化的相似度对比和化学计量学方法, 可实现不同产地沙田柚柚皮挥发物快速、准确地区分, 为沙田柚的产地区分、溯源和品质评价提供了一种新的分析方法。
英文摘要:
      Objective To construct the volatile substance fingerprints of Shatian pummelos from different cultivation regions, and establish a rapid and accurate method for the identifications of the cultivation region and fruit quality of Shatian pummelos. Methods Gas chromatography-ion mobility spectrometry (GC-IMS) was used to analyze the volatile substances in peels and juice sacs of Shatian pummelos from Guangdong and Guangxi, respectively. The fingerprints of volatile substances in peel and juice sacs of Shatian pummelos from different regions were constructed, the composition and relative content differences of the characteristic volatiles of Shatian pummelos from different regions. Results The types of volatile substances and the content the major aroma components (limonene, linalool and pinene, etc.) in the juice sacs were significantly less than that of the peels. The types and content of characteristic volatile substances in Shatian pummelos from different regions were also significantly different. By using principal component analysis (PCA) of the characteristic volatile substances in peel or juice sacs, Shatian pummelos from Guangdong and Guangxi could be distinguished clearly. Conclusion Based on the GC-IMS technology combined with similarity comparison of visualized data and chemometrics methods, the volatile substances of Shatian pummelos peels from different cultivation regions can be distinguished rapidly and accurately, which provides a new analytical method for the distinction and traceability of cultivation regions, as well as the quality evaluation of Shatian pummelos.
