      乳糖酶是一种重要的食品添加剂, 具有催化β-1,4糖苷键水解和转糖苷作用, 能水解乳糖和生产低聚半乳糖, 在乳品工业中有重要的研究应用价值。受复杂反应体系、反应条件的影响, 乳糖酶在实际应用中稳定性和活性相对较差, 制约了乳糖酶的应用。针对游离乳糖酶在工业应用中的不足, 固定化乳糖酶技术应运而生。传统乳糖酶固定化技术仅侧重于酶的固定化, 随着新材料、生物工程技术的发展, 新兴酶固定化载体及技术可以很好实现乳糖酶固定化, 提升了乳糖酶在乳品工业中的应用, 降低了低聚半乳糖和无乳糖牛奶的生产成本。本文对乳糖酶的特性、传统固定化技术、新兴固定化技术、固定化载体材料、固定化策略进行简要综述, 并展望了乳糖酶固定化的发展前景, 旨在为乳糖酶的固定化研究提供借鉴。
英文摘要:
      Lactase is an important food additive, which possesses transglycosylation and hydrolysis of β-1,4glycoside bonds. It has the functions of hydrolysis and transglycosidation. It can hydrolyze lactose and produce galactooligosaccharides. It has important research and utilization value in dairy industry. Affected by complex reaction system and reaction conditions, the stability and activity of lactase in practical application are relatively poor, which restricts the application of lactase. In view of the deficiency of free lactase in industrial application, immobilized lactase technology is born. The traditional lactase immobilization technology only focuses on the immobilization of lactase. With the development of new materials and bioengineering technology, the emerging lactase immobilization technology can not only realize the immobilization of lactase, but also improve the application of lactase in the dairy industry and reduce the production cost of galactooligosaccharide and lactose free milk. This paper briefly reviewed the characteristics of lactase, traditional immobilization technology, novel immobilization technology, immobilized carrier materials and immobilization strategy, and prospected the development prospect of lactase immobilization, in order to provide reference for the immobilization of lactase.
