食品用加热包主要依靠复杂的化学反应使食品复热, 安全上可能存在一定风险。因此, 通过对食品用加热包的品质指标进行分析, 探讨其复热食品的热量传递特性及对食品安全、使用安全及环境安全的影响, 综述目前加热包的性能评价的相关研究进展, 对比密闭式加热和开放式加热的区别, 并对其使用时对环境、食品及消费者的影响, 及使用后丢弃会对环境造成的影响进行分析, 展望食品用加热包未来的发展方向。食品用加热包使用过程中反应不完全, 热能释放不充分; 在热能传递过程中, 存在大量热能损失, 造成资源浪费; 开放式加热时, 加热包中金属元素有随蒸汽迁移的风险, 加热包无纺布包装材料有释放挥发性有机物的可能; 加热包废弃物也可能会对环境造成不利影响。食品用加热包的热效能利用率需要进一步提高, 加热包安全性保障是未来的研究重点之一。 |

Food heaters products rely mainly on complex chemical reactions to reheat the food and may pose some safety risks. Therefore, this paper analysed the quality indicators of food heaters, to explore the heat transfer characteristics of reheated food and their impact on food safety, safety in use and environmental safety, summarized the research progress of performance evaluation of heating package at present, compared the difference between closed heating and open heating, and analyzed its impact on the environment, food and consumers, as well as the impact on the environment caused by discarding after use, and looked forward to the future development direction of heating package for food. The reaction of food heater is incomplete, and the release of heat energy is insufficient. During the process of heat energy transfer, a large amount of heat energy has been lost, which results in the waste of resources. The risk that the metal elements of heater can be transferred by steam exists in open heating. Non-woven fabric packaging may also release volatile organic compounds. Meanwhile, food heater waste may also have an adverse impact on the environment. The utilization rate of heat efficiency of food heating package needs to be further improved, and the safety guarantee of heating package is one of the research focuses in the future. |
