目的 研究老香黄的挥发性物质在不同陈化时间的演变及其差异物质。方法 利用气相色谱-离子迁移谱(gas chromatography-ion mobility spectrometry, GC-IMS)对潮州老香黄在老化过程中的挥发性物质进行分析, 并通过正交偏最小二乘法(orthogonal partial least-squares discrimination analysis, OPLS-DA)模型对不同年份的样品的挥发性物质进行区分和鉴别。结果 共检测出70种挥发性化合物, 包括酯类8种、萜烯类23种、醇类11种、酸类5种、酮类3种、吡嗪类1种、噻唑类1种、醛类18种, 其中的酯类、醇类、酸类随时间显著增加。利用OPLS-DA通过变量投影重要性(variable importance in projection value, VIP)大于1的标准筛选差异挥发物质, 陈化的第1年和第2年间, 有21种挥发性物质产生显著变化。在第2年和第3年间, 有15个挥发性物质产生显著变化。结论 GC-IMS可以有效区分不同陈化时间老香黄的显著差异成分, 陈化过程中共30种挥发性物质产生显著变化, 其中苯基乙醇、α-水芹烯-D、α-松油醇-D、2-蒈烯、三环烯、丙醛、乙酸香叶酯共7个物质在陈化期间持续显著变化。 |

Objective To study the evolution and different volatile components of the Laoxianghuang at different aging time. Methods Gas chromatography-ion mobility spectrometry (GC-IMS) was used to analyze the volatile components of Chaozhou Laoxianghuang during different aging years, and orthogonal partial least-squares analysis (OPLS-DA) was used to distinguish and identify volatile components between different aging years. Results A total of 70 volatile compounds were detected, including 8 kinds of esters, 23 kinds of terpenes, 11 kinds of alcohols, 5 kinds of acids, 3 kinds of ketones, 1 kinds of pyrazines, 1 kinds of thiazoles and 18 kinds of aldehydes. Among them, the esters, alcohols and acids increased significantly with aging time. The differential volatile substances with variable importance in projection value (VIP) greater than 1 was screened by orthogonal partial least-squares discrimination analysis (OPLS-DA). Between the first and the second year of aging, 21 kinds of volatile substances were screened to show significant changes, and between second and third year of aging, 15 kinds of volatile substances were screened to show significant changes, respectively. Conclusion GC-IMS can effectively distinguish the significant differences in components of Laoxianghuang at different aging times, and a total of 30 kinds of volatile components produced significant changes. Among them, 7 kinds of compounds, including phenylethanol, α-phellandrene-D, α-terpineol-D, 2-carene, tricyclene, propanal and geranyl acetate changed significantly during aging. |
