目的 优化北京油鸡药膳鸡汤的生产工艺, 开发一款新型北京油鸡药膳鸡汤。方法 将北京油鸡与药食同源食材人参、枸杞子及活性成分人参总皂苷、枸杞多糖有机结合在一起, 以感官评价为主要指标, 以色差、pH和可溶性固形物含量为辅助指标, 通过单因素实验和正交实验探究煮制时间、枸杞多糖添加量和人参总皂苷添加量对北京油鸡药膳鸡汤品质的影响。结果 北京油鸡药膳鸡汤最佳生产工艺: 煮制时间50 min、枸杞多糖添加量540 mg、人参总皂苷添加量72 mg, 在此最佳工艺条件下加工而成的北京油鸡药膳鸡汤中枸杞多糖的含量为34.26 mg/100 mL, 人参总皂苷的含量为3.64 mg/100 mL, 综合感官评分为6.72、L*为93.92、a*为?0.58、b*为19.59, 总透过率为86.29、pH为6.10。结论 本研究开发出一款风味口感良好的北京油鸡药膳鸡汤, 为北京油鸡深加工及产品研发提供思路与理论参考。 |

Objective To optimize the production process of Beijing-you chicken medicinal chicken soup and develop a new type of Beijing-you chicken medicinal chicken soup. Methods Beijing-you chicken was organically combined with Panax ginseng, Lycii fructus, active ingredient total ginsenoside and Lycium barbarum polysaccharide, sensory evaluation was used as the main index, while the chromatic aberration, pH and soluble solids content were used as auxiliary indexes, and the effects of cooking time, Lycium barbarum polysaccharide addition and total ginsenoside addition on the quality of Beijing-you chicken soup were investigated by single factor test and orthogonal test. Results The best production process of Beijing-you chicken medicated chicken soup: The content of Lycium barbarum polysaccharide and total ginsenoside in Beijing-you chicken medicinal chicken soup was 34.26 mg/100 mL and 3.64 mg/100 mL under the optimal conditions of cooking time of 50 min, Lycium barbarum polysaccharide and total ginsenoside content of 540 mg and 72 mg, respectively, and the comprehensive sensory scores were 6.72, L* was 93.92, a* was ?0.58, b* was 19.59, total transmittance was 86.29, pH was 6.10. Conclusion In this study, a good flavor and taste of Beijing-you chicken medicinal chicken soup has been developed, which provides ideas and theoretical references for further processing and product development of Beijing-you chicken. |
