随着人们生活水平的不断提高, 健康意识的不断改善, 加之越来越多的食品安全问题时有发生, 食品安全检测变得尤为重要。离子色谱法具有操作方便、分析速度快、灵敏度高、多组分同时测定等技术特点, 不仅可以同时对多种无机阴、阳离子进行检测, 而且还能对有机酸、碱进行分析, 同时因其分离机制独特, 可弥补液相色谱法或气相色谱法对检测物质分析时的不足, 是一种较为理想的食品安全检测方法。故本文结合近些年国内外关于离子色谱技术在食品安全检测中的研究, 综述了离子检测技术的分离原理、检测方式、技术优势, 同时讨论了离子色谱技术对食品添加剂、非法添加物、食品污染物等检测的应用研究, 以期加大食品安全检测的力度和精度, 以及为离子色谱分离技术在食品安全控制领域拓展和应用提供一定的理论指导依据。 |

With the continuous improvement of people’s living standards, the continuous improvement of health awareness, and more and more food safety problems occur from time to time, food safety testing has become particularly important. Ion chromatography has the advantages of convenient operation, fast analysis speed, high sensitivity and simultaneous determination of multiple components. It can not only detect a variety of inorganic anions and cations at the same time, but also analyze organic acids and bases. At the same time, because of its unique separation mechanism, it can make up for the deficiency of liquid chromatography or gas chromatography in the analysis of detected substances, and is an ideal method for food safety detection. Therefore, this paper combined the research on ion chromatography technology in food safety detection at home and abroad in recent years, summarized the separation principle, detection method and technical advantages of ion detection technology, and discussed the application of ion chromatography to the detection of food additives, illegal additives, food contaminants, etc., so as to increase the strength and precision of food safety detection, and provide a theoretical basis for the development and application of ion chromatography separation technology in the field of food safety control. |
