目的 建立超导磁共振的氢谱弛豫技术鉴别掺假羊肉的检测方法。方法 利用临床磁共振成像(magnetic resonance imaging, MRI)技术上广泛使用的水分子的弛豫性质(纵向弛豫时间T1和横向弛豫时间T2), 在超导3.0 T高场强磁共振成像扫描仪上, 评估不同掺假羊肉的定性权重MRI图像以及定量弛豫时间是否存在差异。结果 在T2权重图像上, 随着掺假肉含量的增加, MRI信号强度呈现趋势性变化, 不同掺假肉的变化趋势不同, 而在T1权重图像上未观察到类似现象。通过定量的弛豫时间分析, 发现随着掺假肉含量增加, 横向弛豫时间T2显著改变(P<0.05), 且T2与掺假肉的比例存在强线性相关, 而所有掺假羊肉样品的T1未发现明显变化。结论 利用目前已广泛普及的医用超导磁共振成像设备和弛豫时间测量技术, 可以鉴别掺假羊肉。同时该方法具有简单、快速、准确、无损等诸多优点, 本研究对磁共振成像技术在食品安全领域的应用具有重要意义。 |

Objective To establish a detection method for identifying adulterated mutton by hydrogen spectrum relaxation technique of superconducting magnetic resonance. Methods The water relaxation properties (longitudinal relaxation time T1 and transverse relaxation time T2), which had been widely used in clinical (magnetic resonance imaging (MRI) exams, were used to assess the quality of different adulterated mutton on a superconducting 3.0 T high-field MRI scanner. Both the qualitative weighting images and the quantitative relaxation times were measured for all samples. Results From the T2 weighted images, the MRI signal intensity showed obvious change trends with the increase of the adulterated meat content, what’s more, the change trends of different adulterated meat were different, but no similar phenomenon was observed from the T1 weighted images. Through quantitative relaxation time analysis, with the increase content of adulterated meat, transverse relaxation time T2 significantly changed (P<0.05), and there was a strong linear correlation between T2 and the proportion of adulterated meat. On the other hand, no significant changes were found from the T1 mapping images for all samples. Conclusion Adulterated mutton can be identified by measuring the relaxation times using the superconducting MRI scanner. At the same time, the method has many advantages, such as being simple, rapid, accurate, and non-destructive. This study is of great significance to the application of MRI technology in the field of food safety.. |
