目的 研究我国不同产区间羊肉组织中C、N稳定同位素比值(δ13C和δ15N)的差异及规律。方法 采集我国4个代表性产区的羊肉, 分离提取其肉粉、脂肪、脱脂肉粉3种组织部位, 采用元素分析仪-稳定同位素比值质谱法(element analyzer-isotope ratio mass spectrometry, EA-IRMS)对其δ13C和δ15N进行检测。结合多种统计学方法对结果进行统计。结果 我国多个产区出产羊肉的δ13C和δ15N存在显著差异。采用主成分分析法可以将各产地的产品大致区分开; 通过聚类分析可以把产品按农区产地与牧区产地区分开, 但各产地产品无法独立区分开; 采用判别分析, 农区产地与牧区产地的整体交叉检验正确率为84.0%。结论 研究表明δ13C和δ15N可以作为羊肉产地的溯源指标。初步建立了国内4个羊肉产地的溯源模型, 为国产羊肉产地溯源研究提供了依据。 |

Objective To study the difference and law of C and N stable isotope ratio (δ13C and δ15N) in mutton tissue from different producing areas in China. Methods Mutton from 4 representative production areas in China was collected, 3 kinds of tissue parts of meat powder, fat and defatted meat powder were separated and extracted, and the element analyzer-isotope ratio mass spectrometry (EA-IRMS) was used to detect δ13C and δ15N. The results were counted by combining a variety of statistical methods. Results There were significant differences in δ13C and δ15N value of lamb in different producing regions. Principal component analysis could be used to roughly distinguish the products of various producing areas; through cluster analysis, the products could be separated according to the producing areas of agricultural areas and pastoral areas, but the products of each producing area could not be separated independently; using discriminant analysis, the overall cross test accuracy of agricultural and pastoral areas was 84.0%. Conclusion This research shows that δ13C and δ15N can be used as the traceability indexes of mutton origin. The traceability models of 4 mutton producing areas in China are preliminarily established, so as to provide a basis for the traceability research of domestic mutton producing areas. |
