1954年杂色曲霉毒素首次从杂色曲霉培养物中分离出, 是一种微黄色针状晶体有毒化合物, 由二呋喃环和氧杂蒽酮组成的基本结构与黄曲霉毒素十分相似, 其产生的毒性仅次于黄曲霉毒素, 被国际癌症研究机构归类为致癌物2B级, 对动物和人类健康存在极大的危害, 受到了国内外研究人员的关注。本文从杂色曲霉毒素的主要毒害作用和国内外研究人员对粮食中杂色曲霉毒素污染情况研究等方面进行系统综述, 并详细介绍了高效液相色谱-串联质谱法、高效液相色谱法、薄层色谱法、酶联免疫法和生物传感器测定法等粮食中杂色曲霉毒素主要分析检测技术的研究进展, 为粮食杂色曲霉毒素限量标准制定、安全风险评估和新型检测方法研发提供了理论依据。 |

Sterigmatocystin has been first isolated from Aspergillus variegatus culture in 1954, it is a slightly yellow needle crystal toxic compound, the basic structure composed of difuran ring and oxaanthrone is very similar to that of aflatoxin, its toxicity is second only to aflatoxin and is classified as carcinogen 2B by International Agency for Research on Cancer, it has great harm to animal and human health, which has attracted the attention of researchers at home and abroad. This paper systematically reviewed the main toxic effects of Aspergillus variegatus and the research on the pollution of Aspergillus variegatus in grain by researchers at home and abroad, and introduced in detail the research progress of main analytical and detection technologies of Aspergillus variegatus in grain, such as high performance liquid chromatography-tandem mass spectrometry, high performance liquid chromatography, thin layer chromatography, enzyme-linked immunosorbent assay and biosensor determination, etc., provided a theoretical basis for the formulation of the limit standard of Aspergillus variegatus in grain, safety risk assessment and the development of new detection methods. |
