      弯曲菌感染是引起细菌性肠胃炎的主要原因之一, 在世界范围内是常见的食源性人畜共患致病菌。家禽被证明是弯曲菌的重要储存库, 同时也是人类弯曲菌病的主要感染源。弯曲菌的多重耐药性问题严重, 人类弯曲菌病的发病率居高不下, 对公共卫生造成威胁。因此, 寻找一种安全的抗生素替代品已经成为了目前亟待解决的问题。噬菌体是环境中普遍存在的细菌杀手, 能够侵占细菌宿主细胞, 抑制其正常生存繁殖, 其中特异性噬菌体能够裂解细菌, 具有特异性强、使用简便、增殖快、抗菌能力强的特点, 有成为抗生素代替品的潜力。本文就弯曲菌噬菌体的分类、弯曲菌噬菌体的生物学特性及噬菌体在家禽中的应用进行了综述, 以期为弯曲菌噬菌体在食品安全控制方面的应用研究提供参考。

      Campylobacter infection is one of the main causes of bacterial gastroenteritis, and it is a common food-borne zoonotic pathogen in the world. Poultry has been proven to be an important reservoir of Campylobacter, and it is also the main source of infection for human Campylobacter disease. The multi-drug resistance of Campylobacter is a serious cause of the high incidence of human campylobacteriosis and has a negative impact on public health. Therefore, it has become an urgent problem to find a safe substitute for antibiotics. Bacteriophage is a ubiquitous bacterial killer in the environment, which can invade bacterial host cells and inhibit their normal survival and reproduction. In addition, specific bacteriophages can lyse bacteria and have the characteristics of strong specificity, easy use, fast proliferation, and strong antibacterial ability. They have the potential to become a substitute for antibiotics. This article reviewed the classification and biological characteristics of Campylobacter phages, as well as the application of Campylobacter phages in poultry, and provided some guidance for the application of Campylobacter phages in food safety control.
