      目的 优化霍山石斛运动饮料加工工艺, 并对其抗疲劳作用进行研究。方法 采用单因素实验和正交实验优化霍山石斛运动饮料工艺参数。通过研究小鼠力竭游泳时间、血乳酸、血尿素氮等指标, 来研究该饮料的抗疲劳作用。结果 该运动饮料最佳工艺配方为: 霍山石斛提取液添加量25%、白砂糖添加量6.0%、柠檬酸添加量0.12%。在此条件下感官评分得分最高94.6。动物实验表明不同剂量组对小鼠体重无差异性影响(P>0.05), 但能显著增加小鼠力竭游泳时间(P<0.05), 抑制血乳酸、血尿素氮堆积(P<0.05)。结论 霍山石斛运动饮料对小鼠具有一定的抗疲劳作用。

      Objective To optimize the processing technology of Dendrobium huoshanense sports drink and study its anti-fatigue effects. Methods The optimal process parameters of Dendrobium huoshanense sports drink were optimized by single factor test and orthogonal test, and the anti-fatigue effect of sport drink was studied by studyingthe swimming time, blood lactic acid and blood urea nitrogen of exhaustion mice. Results The optimized formulas of the sports drink were as follows: Dendrobium huoshanense extract 25%, sugar 6.0%, citric acid 0.12%. Under such conditions, the sensory score was 94.6. The results showed that Dendrobium huoshanense sports drink had no significant impact on body weight of mice (P>0.05), the swimming time of exhaustion mice was significantly increased (P<0.05), and the biochemical analysis found that the accumulation of blood lactic acid and blood urea nitrogen in the serum were inhibited (P<0.05). Conclusion Dendrobium huoshanense sports drink has certain anti-fatigue effect on mice.
