      目的 探究缢蛏在(5±1) ℃无水低温保活过程中的营养成分和生化特性变化。方法 通过脂肪、粗蛋白、水分、灰分、糖元、pH、乳酸等指标变化, 探索缢蛏营养成分和生化特性的变化规律。结果 洗净组(5±1) ℃和带泥组(5±1) ℃在5 d及之前存活率高于50%, 空白组(20±1) ℃在2 d及之前存活率高于50%。营养成分中, 各组间水分含量变化无显著差异(P>0.05); 各组间粗蛋白含量显著下降(P<0.05), 5 d后洗净组下降幅度为8.91%; 各组间粗脂肪含量显著下降(P<0.05), 5 d后洗净组下降幅度为39.33%; 各组间灰分变化显著(P<0.05), 保活期间带泥组灰分含量变化始终小于其他两组。生化特性中, 各组间pH变化显著(P<0.05), 保活期间带泥组的pH始终高于洗净组的pH。保活期间, 缢蛏的乳酸含量与糖原含量呈负相关趋势, 洗净组乳酸上升量低于带泥组, 且洗净组糖原下降幅度低于其他两组。结论 研究表明(5±1) ℃无水低温保活过程中, 洗净组缢蛏营养损失和生化特性变化均较缓慢, 且保持良好的鲜活状态。

      Objective To explore the changes of nutrient compositions and biochemical characteristics of Sinonovacula constricta in the process of keeping alive at (5±1) ℃ in survival without water at low temperature. Methods Through the changes of fat, crude protein, moisture, ash, glycogen, pH, lactic acid and other indicators, the changes rule of nutritional components and biochemical characteristics of Sinonovacula constricta were explored. Results The survival rates of the clean group (5±1) ℃ and the muddy group (5±1) ℃ were higher than 50% at 5 days and before, and the survival rate of the blank group (20±1) ℃ was higher than 50% at 2 d and before. In the nutrient composition, there was no significant difference in the water content between the groups (P>0.05); the crude protein content between the groups decreased significantly (P<0.05), and the decrease in the washing group after 5 days was 8.91%; the crude fat content between the groups significant declined (P<0.05), the decline in the washing group after 5 days was 39.33%; the ash content of each group changed significantly (P<0.05), and the ash content of the muddy group during the preservation period was always smaller than the other two groups. In the biochemical characteristics, the pH between the groups changed significantly (P<0.05), and the pH of the muddy group was always higher than the pH of the cleansed group during the keeping alive period. During the preservation period, the lactic acid content of Sinonovacula constricta was negatively correlated with the glycogen content, the increase in lactic acid in the clean group was lower than that in the muddy group, and the decrease in glycogen in the clean group was lower than that of the other two groups. Conclusion The study shows that during survival without water at (5±1) ℃ in low temperature, the nutrient loss and biochemical characteristics of the clean group of Sinonovacula constricta are relatively slow, and maintains a good fresh state.
