目的 通过对辽宁省生禽肉中空肠弯曲菌的污染状况进行调查, 了解其生禽肉中空肠弯曲菌的毒力基因携带特点。方法 按照GB 4789.9—2014《食品安全国家标准 食品微生物学检验 空肠弯曲菌检验》及采用PCR扩增技术和哥伦比亚血平板检测的方法, 对2018—2020年采自辽宁省14个监测点收集的335份生禽肉进行空肠弯曲菌的检测, 共检出14株空肠弯曲菌并对其进行9种毒力基因分型检测。结果 生禽肉中空肠弯曲菌检出率为4.18% (14/335), 运动相关鞭毛基因flaA、黏附基因cadF、侵袭基因ciaB、趋化基因cheY、外毒素基因cdtB基因是辽宁省生禽肉空肠弯曲菌的主要毒力基因, 至少携带5种毒力基因的菌株达到检出菌总数的100%。结论 辽宁省生禽肉食品中存在空肠弯曲菌的污染情况。严格监控生禽肉中空肠弯曲菌的污染状况, 对于优质生禽肉食品的生产具有重要意义。 |

Objective To understand the virulence gene carrying characteristics of Campylobacter jejuni in raw poultry meat by investigating the carrying characteristics of virulence gene of Camplobacter jejuni in the raw poultry meat in Liaoning Province. Methods According to GB 4789.9—2014 National standard for food safety-Microbiological examination of food-Examination of Campylobacter jejuni and the methods of PCR amplification and Columbia blood plate detection, 335 raw poultry meat collected from 14 monitoring points in Liaoning Province from 2018 to 2020 were detected for Campylobacter jejuni. A total of 14 strains of Campylobacter jejuni were detected and 9 kinds of virulence genotypes were detected. Results The detection rate of Campylobacter jejuni in raw poultry meat was 4.18% (14/335), and the movement related flagellum gene flaA, adhesion gene cadF, invasion gene ciaB, chemotactic gene cheY, exotoxin gene cdtB were the main virulence genes of Campylobacter jejuni in raw poultry meat in Liaoning Province, and the strains carrying at least 5 kinds of virulence genes reached 100% of the total detected bacteria. Conclusion The contamination of Campylobacter jejuni exists in raw poultry food in Liaoning Province. Strictly monitoring the contamination of Campylobacter jejuni in raw poultry meat is of great significance for the production of high-quality raw poultry food. |
