目的 评估不同保健食品原料的砷风险, 研究不同浸提条件(料液比、浸提温度、浸提时间)对无机砷迁移率的影响。方法 以卫生部卫法监发[2002]51号文件为依据, 收集50批保健食品中草药原料, 采用电感耦合等离子体质谱法对其无机砷含量进行检测。以常见原料香菇、竹荪、黄芪为研究对象, 采用单因素实验法研究不同浸提条件对无机砷迁移率的影响。结果 对不同种类、批次和产地的保健食品原料无机砷含量进行了检测, 无机砷浓度范围为0.0050~0.2673 mg/kg。单因素实验结果表明当料液比为1:10 (m:V)、浸提时间为1 h时3种原料的无机砷迁移率均相对较低; 而浸提温度对3种原料的无机砷迁移率具有不同的影响, 其中香菇和竹荪在121 ℃时无机砷迁移率最低, 黄芪在80 ℃时无机砷迁移率最低。结论 不同种类、批次和产地的保健食品原料无机砷含量差异较大, 浸提条件对无机砷迁移率影响显著(P<0.05)。 |

Objective To evaluate the arsenic risk of different health food raw materials and to study the effects of different extraction conditions (ratio of solid to liquid, extraction temperature and extraction time) on mobility of inorganic arsenic. Methods Fifty batches of health food raw materials of Chinese medicine were collected according to documents health law supervision and development [2002] No.51 released by the Ministry of Health, and the inorganic arsenic content was detected by inductively coupled plasma mass spectrometry. Lentinus edodes, Dictyophora, and Astragalus were selected as the research objects. The effects of different extraction conditions on mobility of inorganic arsenic were studied by single factor experiment. Results The inorganic arsenic content in different types, batches and habitats of health food raw materials was detected, and the inorganic arsenic concentration range was 0.0050-0.2673 mg/kg. The single factor experiment results showed that the mobility of inorganic arsenic in 3 kinds of raw materials were relatively low when the ratio of solid to liquid was 1:10 (m:V) and the extraction time was 1 h. The extraction temperature had different effects on mobility of inorganic arsenic. The mobility of inorganic arsenic of Lentinus edodes and Dictyophora were the lowest at 121 ℃, and that of Astragalus was the lowest at 80 ℃. Conclusion The content of inorganic arsenic in different kinds, batches and habitats of health food raw materials varied greatly, and the extraction conditions have significant effects on mobility of inorganic arsenic (P<0.05). |
