      食源性人兽共患病是指摄入被人与脊椎动物共同病原微生物污染的食物后, 在人与脊椎动物之间相互传播的疾病。随着饮食习惯及畜牧业的发展, 食源性人兽共患病对食品安全、人类公共卫生安全及畜牧业的持续发展发起了更加严峻的挑战。近几年全球范围内食源性人兽共患病的传播, 正是由人类的不良饮食习惯、对人与自然和谐共处意识的缺乏、对公共卫生风险防控能力的不足所导致的。因此, 了解目前对食源性人兽共患病的防治措施及防控检测手段, 进一步开发拓展对食源性人兽共患病病原安全有效、快速、经济的检测方法是十分必要的。本文综述了近年以细菌、病毒、寄生虫为代表的食源性人兽共患病病原的常用检测手段, 以期为食品质量安全控制提供参考, 同时也为新技术的开发提供研究基础。
英文摘要:
      Food-borne zoonoses are diseases, usually after ingesting food contaminated by microorganisms common to humans and vertebrates, which can be transmitted between humans and vertebrates. With the development of dietary habits and animal husbandry, food-borne zoonoses has posed a more severe challenge to food safety, human public health safety and the sustainable development of animal husbandry. The global spread of food-borne zoonoses in recent years are precisely caused by human's bad dietary habits, lack of awareness of harmonious coexistence between human and nature, and insufficient ability of prevention and control of public health risks. Therefore, it is very necessary to understand the extant prevention and control measures and detection methods for food-borne zoonosis, and to further develop safe, effective, rapid and economical detection methods for food-borne zoonoses. This paper introduced the common detection means of foodborne zoonotic pathogens represented by bacteria, viruses and parasites, in order to provide a reference for food quality and safety control, and also provide a research basis for the development of new technologies.
