目的 研究安徽省市售4类鸡产品鸡肉、鸡蛋、鸡胗、鸡肝中铜、锌元素的含量, 并分析铜、锌元素在不同鸡产品中分布特征。方法 采集16个地级市市售的4类鸡产品, 依据GB 5009.268—2016《食品安全国家标准 食品中多元素的测定》对4类鸡产品中铜、锌含量进行分析, 采用SPSS 17.0对数据进行统计分析。结果 237份样本中鸡肉、鸡蛋、鸡胗和鸡肝中铜含量的平均值分别为0.44、0.59、0.85、8.92 mg/kg, 锌含量的平均值分别为12.50、12.95、27.14、39.66 mg/kg, 鸡肉、鸡肝、鸡胗和鸡蛋中铜、锌含量的分布相同, 都为鸡肝>鸡胗>鸡蛋>鸡肉, 且4类鸡产品中铜、锌含量有显著性差异, 且P<0.05。不同地区(皖南、皖北、皖中)4类样本中, 部分含量差异有统计学意义。结论 本地区人群4类鸡产品可作为人体摄入铜、锌主要来源之一, 鸡肝和鸡胗因铜锌含量较高不易长期过量摄入, 但当机体铜、锌缺乏时, 鸡肝和鸡胗可作为营养补充的重要来源。 |

Objective To study the contents of copper and zinc in chicken, egg, gizzard and liver of 4 kinds of chicken products sold in Anhui province, and analyze the distribution characteristics of copper and zinc in different chicken products. Methods Four types of chicken products sold in 16 prefecture-level cities were collected, and the contents of copper and zinc in four types of chicken products were analyzed according to GB 5009.268—2016 National food safety standard-Determination of multiple elements in food SPSS 17.0 software was used for statistical analysis of the data. Results The mean contents of copper in chicken, egg, chicken gizzard and chicken liver were 0.44, 0.59, 0.85 and 8.92 mg/kg, and the mean contents of zinc were 12.50, 12.95, 27.14 and 39.66 mg/kg, respectively. The distribution of copper and zinc contents in chicken, chicken liver, chicken gizzard and egg was the same, all of which were chicken liver > chicken gizzard > egg > chicken, and the contents of copper and zinc in the four kinds of chicken products were significantly different (P<0.05). There were statistically significant differences in some contents among 4 types of samples from different regions (southern Anhui, northern Anhui and central Anhui). Conclusion The 4 types of chicken products in this region can be used as one of the main sources of human intake of copper and zinc. The liver and gizzard of chicken are not prone to long-term excessive intake because of the high content of copper and zinc, but when the body is deficient in copper and zinc, the liver and gizzard of chicken can be used as an important source of nutritional supplement. |
