      目的 采用电感耦合等离子体质谱法(inductively coupled plasma mass spectrometry, ICP-MS)同时测定蜂蜜中K、Ca、Na、Mg、Fe、Sr、Mn和Cu共8种矿物元素的含量, 并将其用于蜂蜜的特征分析和产地溯源。方法 选取中国不同地理位置的7种特色单花蜂蜜, 在硝酸-双氧水体系的作用下, 经电热预消解和微波后消解, 由电感耦合等离子体质谱仪测定, 以Sc和Ge为内标元素在线校正, 采用外标法定量。分析每种蜂蜜中的特征元素, 计算元素总量及各元素与Mg含量的比值, 并建立蜂蜜元素指纹图谱。结果 本方法中各元素线性关系良好, 相关系数为0.9990~1.0000, 检出限为0.01~0.20 mg/kg, 不同添加水平下的回收率为88.0%~120.0%, 相对标准偏差小于5%。椴树蜜和枣花蜜含有较丰富的K, 荞麦蜜中的Mn和Cu含量最高, 枣花蜜中的Ca、Na、Mg和Sr含量最高, 葵花蜜中的Ca和Mg含量仅次于枣花蜜, 荆条蜜中的Fe含量最高, 洋槐蜜和油菜蜜中的矿物元素水平相对较低。蜂蜜元素指纹图谱的建立可以更直观、更有效地区分7种单花蜜。结论 蜂蜜中矿物元素的检测及蜂蜜元素指纹图谱的建立有助于评价不同蜂蜜的特征及营养价值, 并可以对蜜源植物和产地的真实性进行判定。

      Objective To determine the content of 8 kinds of mineral elements including K, Ca, Na, Mg, Fe, Sr, Mn and Cu in honeys by inductively coupled plasma-mass spectrometry (ICP-MS) and use them for the characteristic analysis and origin traceability of honey. Methods Under the action of nitric acid-hydrogen peroxide system, 7 kinds of Chinese monofloral honey from different geographical origins were pre-digested by electric heating, post-digested by microwave and analyzed by ICP-MS. Sc and Ge were used as internal standard elements to correct online and the quantification was realized by external standard method. The characteristic elements in each honey were analyzed and the total element content were respectively calculated. The ratio of each element to Mg content were calculated to establish honey element fingerprints. Results All elements presented a good liner relationship with correlation coefficients between 0.9990 and 1.0000. The limits of detection were 0.01-0.20 mg/kg. The recoveries under different spiked levels ranged from 88.0% to 120.0% and the relative standard deviations were less than 5%. Linden and jujube honeys were rich in K. Buckwheat honey contained the highest content of Mn and Cu. Jujube honey had the highest content of Ca, Na, Mg and Sr. The content of Ca and Mg in sunflower nectar were second only to those in jujube nectar. Chaste honey had the highest content of Fe. Both acacia and rape honeys presented relatively low levels of mineral elements. The honey element fingerprints could help distinguish the 7 kinds of monofloral honeys more intuitively and effectively. Conclusion The detection of mineral elements in honey and the establishment of honey element fingerprint are helpful to evaluate the characteristics and nutritional value of different honeys, and can judge the authenticity of nectar source plants and origins.
