目的 建立自动电位滴定法测定含油食品中过氧化值含量的分析方法。方法 含油食品可食部分经粉碎混匀, 用石油醚常温水浴振荡快速提取, 提取液脱水过滤后减压蒸干, 液体油脂物作为试样, 按优化后的前处理条件, 用自动电位滴定仪测定过氧化值含量。结果 该法相对标准偏差为1.4%, 精密度优于国家标准法, 2者测定结果无显著性差异。对11类14批含油食品进行检测, 过氧化值均符合相应产品标准的限值要求。结论 该方法操作简便易行, 测定结果精密度高、耗时短、安全环保, 适合为GB/T 5009.227—2016中电位滴定法的完善提供重要参考。 |

Objective To establish a method for the determination of peroxide value in oily food by automatic potentiometric titration. Methods The edible parts of oily food were crushed and mixed, and extracted with petroleum ether in a water bath at normal temperature. The extracted liquid was dehydrated and filtered, then evaporated and dried at reduced pressure. The liquid oil was taken as sample, and the peroxide value was determined by automatic potentiometric titrator according to the optimized pretreatment conditions. Results The relative standard deviation of this method was 1.4%, and the precision of this method was better than that of the national standard method. Fourteen batches of 11 categories of oily food were tested, and the peroxide values were in line with the limit requirements of the corresponding product standards. Conclusion This method is simple, accurate, safe and environmentally friendly, which is suitable for the improvement of potential titration method in GB/T 5009.227—2016 to provide important reference. |
