目的 了解我国市售婴幼儿谷类辅助食品营养成分含量水平, 为GB 10769—2010《食品安全国家标准 婴幼儿谷类辅助食品》标准修订提供参考。方法 收集我国市售婴幼儿谷物辅助食品、婴幼儿高蛋白谷物辅助食品、婴幼儿生制类谷物辅助食品和婴幼儿饼干类辅助食品, 对GB 10769—2010中规定的基本营养成分和可选择营养成分含量进行检测, 对检测结果进行统计分析。结果 共收集婴幼儿谷类辅助食品2004份, 其中婴幼儿谷物辅助食品1850份, 婴幼儿高蛋白辅助食品50份, 婴幼儿生制类食品51份, 婴幼儿饼干53份。婴幼儿高蛋白谷物辅助食品蛋白质平均含量高于其他3类谷物辅助食品蛋白质含量, 为0.88 g/100 kJ, 差异具有统计学意义(P<0.05)。婴幼儿饼干类辅助食品能量和脂肪平均含量高于其他3类谷物辅助食品能量和脂肪含量, 分别为1777 kJ/100 g和0.55 g/100 kJ, 差异具有统计学意义(P<0.05)。对于GB 10769—2010有下限值和上限值范围值的营养素, 维生素A、维生素D、钙、铁、锌、维生素E、磷、碘、钾等含量平均值分别接近或略低于各自理论平均值。对于GB 10769—2010无上限值范围值的营养素, 市售产品其含量范围的最大值是国标下限值的2.83~67.04倍, 其含量范围的95百分位数是国标下限值的2.05~16.35倍。结论 GB 10769—2010中未制定上限值的营养成分出现离群值。建议综合考虑我国市售婴幼儿谷类辅助食品营养素含量分布情况, 对无上限值的营养素进行修订。 |

Objective To study the level of nutrient contents in commercial cereal-based complementary foods for infants and young children, in order to provide reference for the revision of GB 10769—2010 National food safety standard-Cereals for infants and young children. Methods The commercial available cereal supplementary foods for infants and young children, high-protein cereal supplementary foods for infants and young children, raw cereal supplementary foods for infants and young children, and biscuit supplementary foods for infants and young children were collected in China. The content of essential nutrients and optional nutrients issued in national food safety standard GB 10769—2010 was tested and the values of nutrients content were analyzed statistically. Results A total of 2004 cereal-based complementary foods for babies were collected, including 1850 cereal-based foods, 50 cereal-based foods rich in protein, 51 infant raw food and 53 infant biscuit. The average protein content of high-protein cereal supplementary foods for infants and young children was 0.88 g/100 kJ, which was higher than the protein content of other 3 types of cereal supplementary foods, and the difference was statistically significance (P<0.05). The average energy and fat content of biscuit supplementary food for infants were higher than those of the other three kinds of cereal supplementary food, which were 1777 kJ/100 g and 0.55 g/100 kJ, respectively, and the difference was statistically significance (P<0.05). The average content of vitamin A, vitamin D, calcium, iron, zinc, vitamin E, phosphorus, iodine and potassium was respectively almost equal to or slightly lower than their theoretical average values, where there were the lower and upper limits of those nutrients issued in GB 10769—2010. For those nutrients without upper limits have not been regulated in GB 10769—2010, the maximum content range of commercially marketed products was 2.83?67.04 times of the lower limit value of national standard, and the 95 percentile content range was 2.05?16.35 times of the lower limit value of national standard. Conclusion There are outliers in the nutritional components for which the upper limit value is not established in GB 10769—2010. It is recommended to comprehensively consider the nutrient content distribution of cereal supplementary foods for infants and young children on the market in my country, and revise the nutrients that have no upper limit. |
