目的 建立电感耦合等离子体质谱法(inductively coupled plasma mass spectrometry, ICP-MS)测定不粘锅在5种食物模拟液中15种金属元素的迁移的分析方法。方法 通过模拟日常实际烹饪过程, 再采用水、4%乙酸溶液、2 g/L氯化钠溶液、10%乙醇溶液和精炼橄榄油5种模拟液对不粘锅烹饪前后进行金属的迁移试验, 迁移液中的金属元素用ICP-MS测定。结果 汞元素质量浓度在10.00 μg/L以内, 铁、铝、镁元素在 500 μg/L以内, 其余元素在100 μg/L以内呈线性关系, 相关系数≥0.995, 方法所测元素的检出限在0.0300~0.500 μg/L之间, 精密度试验相对标准偏差<15%, 回收率满足79%~100%。结论 该方法适用范围广、检验方法简单、重现性好、准确度高, 推广应用对我国食品安全的监督检验和消费者不粘锅的选择具有重要意义。 |

Objective To establish an analytical method for the determination of the migration of 15 metal elements in non-stick pan in 5 food simulants by inductively coupled plasma mass spectrometry. Methods By simulating the daily actual cooking process, the 5 simulants of water, 4% acetic acid solution, 2 g/L sodium chloride solution, 10% ethanol solution and refined olive oil were used to conduct the metal migration test before and after cooking in a non-stick pan. The metal elements in the migration solution were determined by ICP-MS. Results The mass concentration of mercury was within 10.00 μg/L, that of iron, aluminum and magnesium was within 500 μg/L, and that of other elements was within 100 μg/L. The linear relationships were established with the correlation coefficient≥0.995. The detection limits of elements determined by the method were within 0.0300?0.500 μg/L. The relative standard deviation of precision test was less than 15%, and the recovery rate met the requirements of 79%?100%. Conclusion This method has a wide range of application, simple inspection method, good reproducibility and high accuracy. It is of great significance for the supervision and inspection of food safety in China and the choice of non-stick pans for consumers. |
