      目的 调查分析婴配奶粉中2种氯丙醇酯(chloropropanolsesters, MCPDE)和缩水甘油酯(glycidylesters, GEs)的污染暴露情况。方法 按照GB 5009.6—2016《食品安全国家标准 食品中脂肪的测定》中第三法对脂肪进行提取, 采用气相色谱-质谱联用法测定, 同位素内标法定量。结果 3-氯丙醇酯(3-monochloropropane-1,2-diol esters, 3-MCPDE)的检出率为100%, 2-氯丙醇酯(2-monochloropropane-1,3-diol esters, 2-MCPDE)的检出率为95.0%, GEs的检出率为78.3%。14批次0~6月龄、5批次6~12月龄婴配奶粉的MCPDE超过3-MCPDE的每日最大允许耐受量(tolerable daily intake, TDI), 1批次0~6月龄、1批次12~36月龄婴配奶粉的GEs超过欧盟限量值。结论 对于0~6月龄的婴儿, 氯丙醇酯摄入的健康风险需引起重点关注; 婴配奶粉缩水甘油酯摄入的健康风险较低, 仍需积累数据。
英文摘要:
      Objective To investigate and analyze the exposure risk of contamination levels of 2 kinds of chloropropanolsesters and clycidylesters in infant formula. Methods According to the third method of GB 5009.6-2016 National food safety standard-Determination of fat in food, the fat was extracted and quantitatively determined by gas chromatography-mass spectrometry and isotope internal standard method. Results The detection rate of 3-MCPDE was 100%, 2-MCPDE was 95.0%, and GEs was 78.3%. The MCPDE content of 14 batches of infant formula of 0?6 months and 5 batches of infant formula of 6?12 months exceeded the tolerable daily intake of 3-MCPDE, and the GEs content of 1 batch of infant formula of 0?6 months and 1 batch of infant formula of 12?36 months exceeded the EU limit. Conclusion For infants of 0~6 months, the health risk of MCPDE intake should be paid more attention. The health risk of GEs intake is low in infant formula, and the data still needs to be accumulated.
