      真菌毒素是由特定真菌在适宜条件下产生的有毒小分子次级代谢产物, 农产品在生长、加工和储运过程中均存在被真菌毒素污染的可能性, 被真菌毒素污染的农产品会严重危害动物和人类的健康。因此建立精确、高效的真菌毒素检测方法对农产品中真菌毒素的防控和监测具有重要意义。本文介绍了近5年农产品中真菌毒素常用检测方法: 仪器分析法、免疫学分析方法和光谱分析法, 综述了这些检测方法的研究进展及优缺点, 重点介绍了光谱分析法在现场检测中的发展。展望了农产品中真菌毒素在未来的发展趋势, 为农产品中真菌毒素检测的相关研究和安全监管提供参考和启发。
英文摘要:
      Mycotoxins are toxic small molecular secondary metabolites produced by specific fungi under suitable conditions. Agricultural products may be contaminated by mycotoxins during growth, processing, storage and transportation. Agricultural products contaminated by mycotoxins will seriously harm animals and human health. Therefore, the establishment of accurate and efficient mycotoxin detection methods is of great significance for the prevention, control and monitoring of mycotoxins in agricultural products. This article introduced the common detection methods of mycotoxins in agricultural products in recent 5 years: instrumental analysis, immunological analysis, and spectroscopic analysis, reviewed the research progress, advantages and disadvantages of these detection methods, emphatically introduced the development of spectral analysis method in on-site detection, also look forward to the future development trend of mycotoxins in agricultural products, and provided reference and inspiration for related research and safety supervision of mycotoxin detection in agricultural products.
