      食品安全一直受到广泛关注, 在实现食品中污染物准确检出的前提下, 快速方便的检测方式对食品安全的维持具有重要现实意义。滚环扩增技术(rolling circle amplification, RCA)发展于20世纪90年代中期, 是一种简单高效的体外核酸扩增技术, 可在等温的条件下快速扩增出由模板互补序列串联而得的长单链DNA。由于其引物易于标记固定和其模板设计多样性, RCA应用于生物传感器中以及在提高传感器的检测灵敏度方面具备显著优势, 因此被广泛应用于医疗诊断、环境监测以及食品安全等生物技术领域的研究中。本文综述了近几年RCA技术在食源性致病微生物、生物毒素、农药兽药残留、重金属等食品安全危害因子检测中的研究与应用进展, 并展望了该技术在食品安全检测领域的发展方向。

      Extensive attention has been paid to food safety issue. On the premise of accurate detection of contaminants in food, a fast and convenient detection method is of great practical significance to ensure food safety. Rolling circle amplification (RCA), developed in the mid-1990s, is a simple and efficient amplification technique of nucleic acid in vitro. RCA can rapidly amplify long single-stranded DNA with a large number of template-complementary sequences under isothermal conditions. Due to the labelability and fixability of its primer and the diversity of template design, RCA has significant advantages in the application of biosensors and in improving the detection sensitivity of biosensors. Therefore, RCA technique has been widely applied in the research and detection of medical diagnosis, environmental monitoring and food safety. This article reviewed the research and application progress of RCA technique in the detection of foodborne pathogenic microorganisms, biotoxins, pesticide and veterinary drug residues, and prospected the development direction of this technology in the field of food safety inspection.
