我国薯类(甘薯、马铃薯)资源丰富, 其高营养价值全球公认。目前, 甘薯和马铃薯主要用于加工淀粉、粉丝、粉条、全粉等, 产品种类较少、营养价值单一, 同其他发达国家相比还有较大差距。国内外研究学者围绕薯类精深加工开展了大量工作, 也取得了一定的成绩。本文在分析我国薯类加工业存在的问题的基础上, 重点概述了薯类制品原料粉、营养健康型薯类制品及副产物高值化利用的研发进展, 并展望了我国薯类加工业的发展趋势, 以期为我国薯类加工产业的健康、可持续发展提供一定的理论依据。 |

China is rich in potato (sweet potato and potato) resources, and their high nutritional value is recognized in the world. At present, sweet potato and potato are mainly used for processing starch, vermicelli, flour, etc. Compared with other developed countries, there is still a big gap due to the less products varieties and single nutritional value. Therefore, researchers from domestic and foreign have carried out a lot of work on the deep processing of potato, and have made some achievements. This paper focused on the research progress of processing for raw material powder for potato products, nutritional and healthy potato products, and high-value utilization of by-products based on the analysis of the problems existing in the potato processing industry in China, and prospected the development trends of potato processing industry in China, so as to provide certain theoretical basis for the healthy and sustainable development of potato processing industry in China. |
