      二硫化钼(MoS2)纳米材料典型的“三层夹心”片层结构, 使其具有特殊的物理、化学、光学、电学特性, 也为其在食品检测中的应用奠定了基础。本文首先简单介绍了二硫化钼的不同制备方法, 包括机械剥离法、液相剥离法等, 化学气相沉积法和水热法, 并对制备方法的优缺点和应用领域进行比较, 然后综述了基于MoS2纳米材料的检测方法在食品检测领域的研究现状, 主要包括比色法、荧光法、电化学传感器、光纤传感器和基于场效应晶体管的传感器等新型检测方法, 简单述评MoS2的性能在检测中的应用, 以及检测方法的特点、原理和应用, 最后对展望了基于MoS2的检测技术在食品检测中的发展前景, 以及可能面临的挑战。
英文摘要:
      The typical “three-layer sandwich” laminate structure of molybdenum disulfide (MoS2) nanomaterial makes it have special physical, chemical, optical and electrical properties, which also lays a foundation for its application in food detection. This article first briefly introduced different preparation methods of molybdenum disulfide, including mechanical stripping method, liquid phase stripping method, chemical vapor deposition method and hydrothermal method. The advantages and disadvantages of the preparation method and the application field were compared, then the research status of MoS2 nanomaterial-based detection methods in the field of food detection was summarized, mainly including new detection methods such as colorimetry, fluorescence method, electrochemical sensors, optical fiber sensors and sensors based on field effect transistors. It briefly reviewed the application of MoS2 performance in testing, as well as the characteristics, principles and applications of testing methods, finally looked forward to the development prospect of MoS2-based testing technology in food testing and the possible challenges.
