食品接触塑料材料及制品向食品可能发生的高关注化合物迁移一直是食品接触材料安全研究和合规管理的重点。这些高关注化合物分为有意添加物和非有意添加物。由于塑料食品接触材料高关注化合物来源复杂, 迁移水平低且相当数量是未知的物质, 在缺乏完整的化学物结构数据库、质谱谱图数据库以及标准品等情况下, 对这些物质的鉴定和定量测定一直是食品接触材料安全分析所面临的重大技术挑战。近年来, 基于气相色谱、液相色谱与各种高分辨率质谱联用的分析技术被视为一种有效手段, 逐渐应用于对食品接触材料中高关注化合物的鉴定和定量分析。本文重点介绍近年来针对食品接触塑料高关注化合物分析的高分辨精确质谱(high resolution mass spectrometry, HRMS)分析技术进展, 包括迁移试验条件、前处理技术、数据采集以及数据处理技术等。并总结应用HRMS技术所分析的不同食品接触塑料中的高关注化合物, 以期为食品接触塑料的风险评估和管理工作提供参考。 |

The substances of very high concern migrated from food contact plastic materials and articles have been the main concern of the safety and legal compliance of food contact materials. These high concerns compounds are divided into intentionally added substances and non-intentionally added substances. Due to the sources of high concern compounds for plastic food contact materials are complex, the level of migration is low, and a considerable number of substances are unknown, in the absence of complete chemical structure database, mass spectrogram database and standard substance, the identification and quantitative determination of these substances has always been a major technical challenge for the safety analysis of food contact materials. In recent years, analytical techniques based on gas chromatography, liquid chromatography and various high-resolution mass spectrometry have been regarded as an effective means to gradually apply to the identification and quantitative analysis of compounds of high concern in food contact materials. This article focused on the recent development of high resolution mass spectrometry (HRMS) analysis techniques for the analysis of compounds of high concern for food contact plastics, including migration test conditions, pretreatment techniques, data acquisition, and data processing techniques, and summarized the high concern compounds in different food contact plastics analyzed by HRMS technology, so as to provide reference for the risk assessment and management of food exposure to plastics. |
