随着我国社会主义市场经济的不断发展, 果品贸易飞速发展, 在软饮料行业中占有举足轻重的地位。但欺瞒消费者果品原产地事件仍然存在, 为了保护各地的优质产品不受影响、保障消费者的合法权益不受侵害以及出现问题时能够快速准确的实施相应的补救措施, 建立一套健全的质量安全全程可追溯体系是必不可少的。本文基于国内外学者对水果及其制品的产地溯源研究进展, 综述了现有技术的基本原理、特点、局限性及应用现状, 重点阐述了稳定同位素技术原理、不同元素的应用特点、主要分析仪器以及在果品产地溯源应用研究现状, 并对该技术的应用前景进行了展望。 |

With the continuous development of China’s socialist market economy, the fruit trade has developed rapidly, occupying a pivotal position in the soft drink industry. However, incidents of cheating consumers on the origin of fruit products still exist. In order to protect high-quality products from being affected, protect the legitimate rights and interests of consumers from being infringed and implement corresponding remedial measures quickly and accurately when problems occur, it is essential to establish a complete traceability system of quality and safety. Based on the research progress of the origin of fruit and its products by domestic and foreign scholars, this paper reviewed the basic principles, characteristics, limitations and current application status of the existing technology, expounded the principle of stable isotope techniques, the application characteristics of different elements, the main analysis instrument and application in fruit origin traceability research present situation, and prospected the application prospect of the technology. |
